Orange Polish Cheesecake (10 eggs!!!)
Ingredients:

1.5kg cheese for cheesecake (3x ground)
200g butter
400g powdered sugar
10 eggs
tablespoon of semolina (kaszy manny)
orange extract
a handful of raisins
Directions:
- preheat oven to 175C
- pour boiling water over raisins
- beat the eggs whites with a pinch of salt using the butterfly attachment - 3 min, speed 3 (without MT), put into a separate bowl
- beat butter with powdered sugar & egg yolks - 5 min, speed 6
- after 1 minute add the cheese slowly and mix at low speed
- add semolina and orange extract
- add mixture to bowl with egg whites and mix gently
- spread with baking paper on the bottom of the springform pan with a diameter of 28 cm
- pour the batter into pan and sprinkle generously with raisins on top
- bake for 1.5 hours
