(Polish) Viennese Cheesecake (8 eggs!)
Ingredients:
1 kg white cheese (białego sera)
8 eggs
250g butter
300g sugar
50g semolina (kaszy manny)
1 pack vanilla sugar (or 1tsp of vanilla)
1 MT cream (12% or higher)
optional: raisins
bread crumbs for the pan
Directions:
- preheat oven to 180C
- beat the eggs whites with a pinch of salt using the butterfly attachment - 3 min, speed 3 (without MT), put into a separate bowl
- sugar, butter and egg yolks beat - 5 min, speed 6
- after 1 minute add cream, cheese, vanilla, semolina
- add mixture to bowl with egg whites and mix gently
- pour into large deep prepared pan (greased with butter and sprinkled with bread crumbs)
- bake for 1 hr
