With our backyard chickens producing 7-8 eggs a day i finally found a good quiche recipe! Looks like we'll be having these for dinner more often. This pie crust recipe is made in the Thermomix, but the quiche is a normal recipe. We don't have the option of buying ready made pie crusts... so i'm thankful for this easy recipe! I'm on the search for good egg recipes, so if you have any feel free to share in the comments ~ we'd be grateful!
Crust in the Thermomix
Ingredients:
210g flour
1tsp baking powder
120g cold, unsalted butter
3 Tbsp ice water
Directions:
- Add flour, baking powder, butter to TM bowl. Mix 10 seconds, speed 6.
- Now, knead for 1 minute and slowly add water through the lid (no need to take out the MC, just pour and it will trickle down).
Cheesy Bacon & Spinach Quiche (5 eggs!)
Ingredients:

5 large eggs, beaten
1 cup heavy cream (250ml)
1 1/2 cups chopped baby spinach
6 strips thick cut bacon, cooked and chopped (or ham)
1 cup shredded cheddar cheese
1/2 teaspoon onion powder
1/2 teaspoon pepper
1/4 teaspoon salt
Directions:
Preheat oven to 375F/190C degrees. Beat eggs with whisk until well blended. Add cream, salt, and pepper. In the bottom of your pie crust layer chopped spinach, then layer chopped cooked bacon, and then layer shredded cheddar cheese. Layer once more, spinach, bacon, and cheese. Pour egg and cream mixture into the pie crust. Bake for 45 minutes until egg mixture is firm and the top is golden. Cut into wedges and serve warm.
