Maple Butternut Squash Soup :: Thermomix Recipe





INGREDIENTS

  • 1 large onion, cut in half
  • 30g butter or oil
  • 6 cups peeled & cubed butternut squash
  • 2 cubes of chicken bouillon
  • 700g water (i want to try 650g water + 50g maple syrup!)
  • 1/2tsp marjoram
  • pinch of cayenne pepepr
  • pinch of black peppers
  • 400g cream cheese

DIRECTIONS


  1. to the mixing bowl add onion, chop 2s/speed 5.
  2. add butter or oil, saute 2 min/varoma/speed 1.
  3. add the rest of the ingredients except the cream cheese, cook, 20 min/varoma/speed 1.
  4. add cream cheese, puree, 1min/increase speed from 1 to 10.
  5. warm up entire soup, 5 min/80C/speed 1.
It's super yummy! And great to make in the thermomix to avoid tranferring and blending, but can also be made using a normal blender (see original recipe below).
