Thermomix American Breakfast Biscuits


American Breakfast Biscuits


Ingredients:
260g     flour
1 Tbsp  baking powder
1/4 tsp   soda
1/2 tsp   salt
5 Tbsp   butter (cold & cubed)
140 g    cold buttermilk (2/3 cup)

Directions:
  • preheat oven to 210C
  • put butter and buttermilk into the freezer for 10 minutes to get very cold
  • place dry ingredients into TM Bowl, mix - 3 sec, speed 4

  • put butter into TM Bowl, mix 2 sec, speed 4 (then repeat, stop when butter appears like small peas in the flour mixture)
  • put buttermilk into TM bowl, mix- 5 seconds, speed 3 (until just comes together into a dough)

  • break into pieces and bake 13-15 minutes 
for round cut biscuits (option):
  • turn dough out onto a floured surface and bring together into a rough square shape
  • roll out to a rectangle about 1/2 inch thick, then fold over several times to create layers (do this quickly and try not to handle too much)
  • lightly press out with your fingers until the dough is about 3/4 inch tall
  • cut out into round shapes using a cutter.
    Place side by side onto a baking sheet lined with baking parchment
  • brush the tops with milk
  • bake for 13-15 minutes until flaky and golden brown
