
This is my friend Erin's recipe and i absolutely LOVE it!
Probably my favourite pumpkin recipe to date...
Erin’s Pumpkin Cream Cheese Bread
1 2/3 cups flour
1 ½ cups sugar
1 t baking soda
½ t salt
1 t cinnamon
½ t cloves
¼ t nutmeg
¼ t ginger
1 cup canned pumpkin
½ cup vegetable oil
2 eggs
8oz cream cheese
½ cup sugar
1 T flour
1 egg
Preheat oven to 325F. Combine flour, sugar, baking soda, salt, spices. Mix in pumpkin, oil, eggs. In separate bowl beat cream cheese, sugar, flour, egg. Pour half pumpkin batter into greased bundt pan. Spoon cream cheese on top. Pour remaining pumpkin batter. Bake 60-70 minutes or until toothpick comes out clean. Cool. Enjoy!
