Family Life :: Banana Crumb + Apple Crunch Muffins

The other day i decided i needed a new banana baking recipe...
found this amazing banana muffin recipe on allrecipes.com

I figure if 6,490 people had rated it and it received 5stars,
it was worth a try! The secret is totally in the topping. yum.



Banana Crumb Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas, mashed
  • 3/4 cup white sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter, melted
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
  2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
  3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
  4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

i still had left over topping that i had saved... and tonight made a batch of apple crunch muffins using the same topping as above! love them.

Apple Crunch Muffins

Ingredients

  • 1 1/2 cups Unbleached Flour, Sifted
  • 1/2 cup Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 1/2 tsp Ground Cinnamon
  • 1/4 cup Vegetable Shortening
  • 1 Large Egg, Slightly Beaten
  • 1/2 cup Milk
  • 1 cup Tart Apples (peeled & diced)
  • 1 cup raisins (if you like)


Directions

Cut in shortening with pastry blender until fine crumbs form. Combine egg

and milk. Add to dry ingredients all at once, stirring just enough to

moisten. Stir in apples. Spoon batter into paper-lined 2 1/2-inch

muffin-pan cups, filling 2/3rds full. (In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.)

Bake in 375 degree oven 20-25 minutes or until golden brown.

Hmmm this recipe looks so delicious and nice and i think that fits perfect with my taste and in my opinion is a very easy recipe, so i think i will try it. Thanks for sharing.
